Kopi Luwak or Civet coffee is coffee made from coffee cherries which have been eaten by and passed through the digestive tract of the Asian Palm Civet (Paradoxorus Hermaphroditus)
After collected, the beans are processed hygienically, and given only a medium roast so as not destroy the complex flavors that develop through the process.
This Kopi Luwak process takes place only on the Island of Bali, Sumatra and Java in The Indonesian Archipelago. Producing no more than 300 kg per year to be distributed throughout the world
